I’ve got a big flush of green beans coming in and want to put some up. I’ve heard conflicting things about whether a water-bath is safe for them or if I have to use a pressure canner. Which is it, and why does it matter?
Great question, and I’m glad you asked before you started putting up jars — this one really matters.
Green beans need a pressure canner. No wiggle room on that.
Here’s the plain reason why: green beans are a low-acid vegetable. Botulism bacteria thrive in low-acid, low-oxygen environments — which is exactly what the inside of a sealed jar is. The spores can survive a boiling-water bath (212°F), but a pressure canner gets your jars up to 240°F, which is the temperature it takes to destroy them. You can’t taste, smell, or see botulism, so there’s no way to know a water-bathed jar is dangerous until it’s too late. That’s why the USDA and the National Center for Home Food Preservation are firm on this one.
A few practical notes:
- You’ll need a dial-gauge or weighted-gauge pressure canner — not a pressure cooker, which is different and not approved for canning.
- Processing time varies by altitude, so check your specific elevation against the NCHFP guidelines. High altitude = more pressure time.
- If your gauge hasn’t been tested in a while, your local Extension office can usually check it for free.
If you don’t have a pressure canner yet, another option is to freeze that flush — blanch for 3 minutes, ice bath, bag 'em up. Frozen beans hold up really well and it buys you time.
